Low Histamine Pea Sandwiches with Ginger and Ricotta

Low Histamine | Recipe
Ingredients
- 2 cups fresh or thawed frozen peas
- 2 tbsp softened butter or olive oil
- 1 tbsp minced ginger
- ½ cup chopped fresh mint
- salt and pepper
- 1 cup ricotta
- 8 slices of bread
Instructions
It’s more than easy to make this ones. Mash the peas with the butter or oil, add ginger, mint, salt and pepper and mix it, until all ingredients connects nicely. You do not want to overmix it and create something that looks like a sandwich spread. Divide peas mix and ricotta between 4 sandwiches. Start with spreading ricotta on it, top with peas, cover with another slice of the bread and it’s ready
