No Tortilla Chicken Soup
Ingredients
- 4 cups of chicken broth
- 1 can fire roasted tomatoes
- 2 jalapenos
- 4 cloves garlic
- 1/2 cup diced onion
- 1 orange bell pepper
- 1 zucchini
- 1 yellow squash
- 2 hot Italian sausages
- 4 chicken thighs
- cilantro
- 2 limes
- avocado
Instructions
- Sautée the onion, bell pepper, garlic, and jalapenos until soft
- Add broth and tomatoes to pot
- removed the sausage from the casing, cook and added that to the pot
- add the juice of one lime and some cilantro
- added the zucchini and squash and let it cook for an hour
- about 15 min before eating dice and cook the chicken thighs then add to soup
- Top with diced avocado, cilantro, and a lime wedge.
